Chinta chiguru Pachadi / Tender Tamarind Leaves Pickle
Ingredients of Chinta chiguru Pachadi :
- Tender tamarind leaves / Chinta Chiguru - 1 cup(50 gms)
- Dry red chilli - 6-7
- Channa dal (Split Chickpeas) - 1 spoon
- Coriander seeds - 1 spoon
- Methi seeds (Fenugreek) - 1/4 spoon
- Oil
- Turmeric
- Salt
- Onion
- tamarind - 2 inches
- For tempering:
- Urad dal -1/4 spoon
- Jeera - 1/4 spoon
- Mustard seeds - 1/4 spoon
- Hing - a pinch
Preparation of Chinta chiguru Pachadi :
1. Rinse tamarind leaves thoroughly with water and put them in a strainer to remove the excess water.
2. Heat a pan with 1 & 1/2 spoon oil.
3. When the oil is hot add chana dal, dried red chillies, urad dal, jeera, mustard seeds, methi seeds, coriander seeds and fry until they are roasted in golden red colour.
Take them into a bowl & keep aside to cool down.
4. In a same pan add 1 spoon oil to the remaining oil and heat it.
5. Add tender tamarind leaves/Chinta Chiguru and fry them for 2 mins.
6. Now add little amount of water to it.
7. Add tamarind to it & cook for around 4 minutes or till water evaporates.

8. In a mixer jar, add roasted chana dal, dried red chillies, urad dal, jeera, mustard seeds, methi seeds, coriander seeds, salt and turmeric and grind them.

9. Add cooked tamarind leaves & grind it into paste.

10. Add chopped onion & grind it again.

11. Prepare the tempering by heating oil add urad dal,jeera,mustard seeds, & a pinch of hing & fry till the urad dal turns golden brown in colour.

12. Pour the tempering onto the Chinta chiguru chutney & mix well.
