Carrot Curry |
Ingredients for Carrot Curry :
- Carrots - 3 Medium,Diced
- Green chillies - 3
- Yellow Moong Dal - 2 or 3 spoons
- Freshly grated coconut - raw, 4 spoons
- Curry leaves
- Cumin seeds
- Oil - 2 spoons
- Mustard seeds
- Urad dal
- Salt - as per taste
- Water

Preparation of Carrot Curry :
1) Add the diced carrot & yellow moong dal to water and boil for 10-15 mins until the carrot & moong dal becomes a bit soft and eatable.
Now remove the water using strainer and keep aside.
2) Heat a pan and add oil,mustard seeds,cumin seeds & urad dal and let it splutter.

3) Now add green chilli,curry leaves and give a mix.

4) Add boiled carrot pieces and yellow moong dal to it and give a mix.
5) Its time to add salt as per taste and grated coconut to the curry and mix well and allow it to cook in 3-5 mins in low flame.

Serving Idea of Carrot Curry :
It goes well with plain rice or chapati.
