Making of Pesarattu :
1) Heat a pan until medium hot, pour the ladle full of batter on the heated pan and spread it to a thin layer quickly in round shape.
One can also use katori instead of ladle.
2) Now sprinkle the mixture of toppings i.e chopped onion,
green chillies, grated carrot, jeera, chopped coriander and curry leaves on top of the dosa and pour some oil on the edges and in the centre of the dosa.
* i) When Pesarattu slowly starts to get crispy over the edges & starts to unstick from the pan its time to flip dosa and cook for around 10 - 15 seconds.
ii) Press these toppings with the spatula so that they get stick to dosa.
3) Serve Pesarattu hot with any chutney such as coconut chutney/ tomato chutney/ tamarind chutney.
Few tips to be noted:-
- Pesarattu dosa batter should be mixed well every time before making each dosa.
