Beerakaya
Karam Koora recipe- simple, delicious and healthy recipe of Ridge gourd and is
a curry prepared in some parts of Andhra (south India).
Ridge
gourd is also known to be Beerakaya, torai, gilki, jhinge, peerkangai in
different regions of India.Ridge
gourd fry dish can be made very easily with few ingredients. It can be prepared
in no time.
Ingredients for Beerakaya Karam:
- Red chilli powder - 1 spoon
- Salt - according to taste
- Ridge Gourd / Beerakaya - 3 big
- Turmeric - 1/4 spoon
- Cumin - 1/2 spoon
- Mustard seed - 1/2 spoon
- Sesame seeds - 1 spoon
- Curry leaves
- Asafoetida / Hing - A pinch of
- Red Chilli - 1
- Oil - 2 spoons
Peel the ridge gourd / beerakaya , wash throughly and chop in a cubes or in a required size, Sometimes ridge gourd / beerakaya may taste bitter so do check the taste of ridge gourd before chopping. Bitter ridge gourd is not fit for cooking so discard it.

Preparation of Beerakaya Karam:
1. To start with Beerakaya Karam firstly prepare tadka in a
kadahi, for that switch on the flame, add oil for tadka once heated add Cumin,
Mustard seed, Red Chilli, curry leaves and a pinch of hing and fry for few
seconds.

2. Add chopped ridge gourd to the tadka & sesame seeds, mix
and cook till ridge gourd pieces become soft.

3. Now add turmeric and salt to the curry and mix well and fry
for couple of minutes.

4. Time to flavour the curry with spices, we will add red chilli
powder & mix well and cook in simmer flame for a couple of minutes.
Serving Idea of Beerakaya Karam:
Beerakaya Karam can be consumed with steamed rice with ghee
and putnala podi. It also tastes good as side dish with dal tadka rice, sambar
rice, curd rice & paratha.
