Vegetable Malai Toast
Vegetable Malai Toast is an easy
and healthy breakfast recipe in which one side bread is coated with the
mixture of milk cream and lots of vegetables.
You can add as many vegetables as possible. I have added
onions, tomatoes, capsicum, green chillies and carrot.
This bread recipe has a very soft and creamy texture which
get melts in mouth because of the malai or cream in it.
The simple bread recipe evenly toasted appetizer
is a perfect fit for an evening snack for kids and adults.

Ingredients Required for Vegetable Malai Toast:
- Bread slices
- Milk cream (fresh cream from milk)/malai
- Carrot
- Capsicum
- Green chilli
- Onion
- Cabbage
- Tomato
- Salt
- Red chili powder
Optional Ingredients:
- Pepper powder
- Coriander & cumin powder
- Chop the veggies i.e. onion, tomato, green chilli, capsicum and cabbage into fine pieces.
- Grate the carrot.
- Malai : Thick malai layer gets formed on the top of the boiled full cream milk which I have collected and stored in the refrigerator. Use it whenever needed.
Preparing the mixture for Vegetable Malai Toast:
1. Take all the chopped & grated
Ingredients in a bowl. Add the spices i.e red chilli powder, salt, pepper
powder and coriander & cumin powder to it and mix.
2. Add the malai, around 4 or 5 spoons
to the mixture and combine all well.
Now vegetable malai mixture is ready.

Method to make Vegetable Malai Toast:
1. Spread
a layer of prepared vegetable malai mixture evenly on one side of each bread
slice.
2. Meanwhile heat a frying pan.

3. Allow it to cook on simmer for about 5-6 minutes (or until bottom
gets nice golden).

4. Carefully flip it to the other side and toast until
nice golden brown in colour.

5. Remove them on the plate and continue to make
remaining the malai toast in this way.
6. Cut them and serve hot with tomato ketchup.

Tips:
- You can prepare the vegetable malai mixture in advance and can store it in refrigerator for instant use.
- In case if the vegetable malai mixture gets thin in texture then add little (or required) amount of semolina or rawa or suji to it.
- You can take any bread or whole wheat bread for this recipe; I have used milk bread to make this.
- You can use little oil / butter/ghee to fry veg malai toast but I have not used any.
It is delicious & healthy dish because
it has a good amount of healthy tea time snacks full of nutrients.
It can also be given in lunch box for kids.
The creamy
