Vegetable Pulao |
Vegetable Pulao is yummy, delicious, healthy and quick to
make as a meal served along with any yogurt raita or kurma curry.
This easy to make mixed vegetable pulao recipe is a spicy
& aromatic main course rice dish prepared by cooking rice with various vegetables and
spices. In this recipe, mix of spices, veggies and rice are first sautéed in
oil and ghee and then cooked in pressure cooker.
This veg pulao recipe is a basic cooking made often in
many Indian homes. Vegetable Pulao (Veg Pulav) is a must found food on the menu
for Indians whether it be a function, gathering, parties, celebration, reunion,
events, birthdays or buffets.
It is not only good for a regular meal or a special meal
but also great idea for school & office lunch boxes.
I am making this pulao recipe in a pressure cooker to save time but if you like to cook pulao in kadai, continue the process from step 7, cover it with lid and simmer for approx. 20 minutes or until rice is cooked completely.

Vegetable Pulao Ingredients:
- Basmati Rice/long grain rice/extra-long grain rice - 250 - 300 gms
- Onion - 1 Big
- Tomato - 1 Medium
- Green chili - 2
- Green Bell Pepper/capsicum - 1 small
- Carrot - 1
- Peas - Hand full of
- Soya Chunks/Meal Maker - Hand full of
- Pudina/mint leaves
- Coriander leaves
- Potato - 1 Big
- Ginger garlic paste - 2 tbsp
- Bay leaf/ Tej Patta - 3
- Shah jeera - 1 tsp
- Poppy seed/Khus Khus - 1 tsp
- Cashew
- Oil - 3 tbsp
- Water
- Garam Masala - 1 tbsp
- Salt - as per taste
- Ghee - 2 tbsp
Rice: Water = 1:2&1/2
All the measurements are approximate and can be changes
according to taste.
Wash the basmati rice and soak it in water for 15 mins.
Preparation of Vegetable Pulao:
1. Fry the cashew in ghee till golden colour and keep aside.
(You can skip this step if you are using roasted cashew.)
2. Heat a kadai / wok and add oil of around 3 tbsp & ghee of 2 tbsp, to that we will add shah jeera, khus khus, bay leaves.

3. To that add onion, diced potato, capsicum and green
chilli and cook.

4. Add carrot and Peas to it and give a mix. And cook for a
couple of minutes.

5. Time to add fresh mint leaves, coriander leaves, Soya
Chunks & tomato. Mix it.

6. Add salt approx. 1/2 spoon & ginger garlic paste to
it and mix well.

Switch off the flame.
Here next I will be using pressure cooker to cook the
Vegetable Pulao.
7. Now take a stainless steel patila which can be used to
place in pressure cooker, fill it with a water with 2 1/2 times the cup size of
rice and bring it to Rolling boil.
8. Transfer the cooked veggies from the kadai to boiling
water.

9. Simmer the flame and add garam masala to it.

10. Add soaked basmati rice and roasted cashew and salt
approx. 1 spoon & mix.
(check the taste if required add the sufficient salt
& garam masala)

Give a mix and bring it to boil.

11. Switch off the flame and add the cup of water in a
pressure cooker and place the patila in it and place the cooker lid on it.

Switch on the flame and place the cooker on the stove and
cook it for 4 whistles on high flame.

Serve Vegetable Pulao hot with vegetable raita.

You can also prepare this pulao with normal rice in
absence of basmati or long grain rice.
